sssmokin'!

the last time i made mac n cheese i didn't think a roux was necessary to make the cheese sauce and just stirred grated cheese directly into the cooked macaroni. i know better now, as the cheese didn't adhere to the noodles and it didn't look that good. my friends still ate it, thankfully.
i tried making mac with smoked cheese last night for dinner and it was more successful. we used a combination of extra old cheddar, applewood smoked cheddar and smoked gouda. josh even had smoked paprika that we added in between two layers of the mac n cheese mixture. then we topped it off with panko and crunchy fried onions from ikea.
